瑞秋媽媽每每去夜市(如果有在台灣的話)必點的美食就是地瓜球、微豆豆花、炭烤臭豆腐、豆乳雞,還有就是炸杏鮑菇。記得杏鮑菇的價位都是一碗$100,聽說有漲價成$150?這也太驚人了吧?!
還好現在已經學會怎麼炸好吃的杏鮑菇了,不用在美國苦苦思念,以後回台灣也可以省錢了,哈!千萬別擔心製作過程會很繁雜,因為一點也不。瑞秋媽媽在網路上找了好多食譜,終於找到了一個喜歡的,不用製作粉漿,裹的粉也不需太多的「薄皮炸杏鮑菇」,還小小的修改了一下食譜:
讓我們來看看所需材料有哪些:
- 杏鮑菇 3根 / King oyster mushroom x 3
- 日式鰹魚粉 1小匙 / Bonito soup stock 1 tsp
- 鹽 1小匙 / Salt 1 tsp
- 黑胡椒粉 適量 / Black pepper as your preference
- 地瓜粉 2大匙 / Sweet potato starch 2 tp
- 太白粉 2大匙 / Potato starch 2tp
- 九層塔 少許 / Basil leaves as your preference
- 鹽酥雞椒鹽+白胡椒粉 適量 / Pepper Salt for fried chicken + white pepper as your preference
首先將杏鮑菇切成適當大小(一口吃)倒入鋼盆,將鰹魚粉、鹽、黑胡椒粉撒進去攪拌均勻
First cut the king oyster mushroom to a suitable size (usually the size you can eat it in one bite), and put them in a big bowl and mix in Bonito soup stock, salt, black pepper.
而後,倒入地瓜粉及太白粉攪拌均勻,確定每塊都有沾上
Once the above ingredients are mixed evenly, mix in sweet potato starch and potato starch till the starch evenly covers the mushroom.
接下來的步驟很重要,
開始擠壓杏鮑菇讓水分出來,所有的粉遇水就會自動形成粉漿,都能完整沾黏包裹我們的杏鮑菇喔!
Now this is an important step. Squeeze the juice out of the mushroom. The juice will help the starch stick to the mushroom and will completely cover the mushroom.
等油鍋熱了(大約170-180度),我會把火關到中小火,就可以將杏鮑菇下鍋炸啦!
Heat oil in a pot to about 338~356 °F (170~180 °C ), turn to medium fire and add the mushroom into the oil.
p.s:如果沒有廚房用溫度計,可以將筷子插入油鍋裡,如果筷子周圍很快地有小泡泡冒上來代表油溫熱囉。
P.S: If you don’t have a thermometer in the kitchen, you can use a wood utensil and dip it into the oil. If you can see small bubbling around the utensil, that means the oil is hot enough.
為了要讓杏鮑菇表面酥脆,需要經過二次油炸
因此第一次油炸至輕微金黃色時就可以撈起,等油鍋再次熱起來就可以開始第二次的油炸。
To make the surface crispy, it needs to be deep fried second time.
In the first around, deep fry the mushroom till the surface turns light golden brown and pick the mushroom up and let the oil heat up to the above temperature. Once the oil is hot enough, add the mushroom back in.
當杏鮑菇呈現好看的金黃色的時候就可以撈起來囉!
均勻撒上鹽酥雞椒鹽以及白胡椒粉,在炸些九層塔當裝飾,完成囉!
When the mushroom turns to a beautiful golden brown color, it is time to pick them up. Evenly spread the pepper salt for fried chicken and white pepper. If you would like, you can also deep fry some basil as decoration.
